At the start of my pregnancy all I wanted to eat was junk. I ate a lot of toast, crackers and hot chips and although I knew that I should be eating healthy, I didn’t care because I was going to eat anything to make me feel better.
It’s all been pretty crusiey so far, after those first 18 weeks. J said I got so good at dry retching and vomiting that on the way out to feed the chickens, I would vomit and just keep walking, I wouldn’t even miss a step. Charming, I know.
Thankfully that has all changed since then, and I’ve been feeling much better. In fact, I’ve really been feeling awesome. I’m loving the heat waves that Victoria continues to get, I’ve been doing more exercise and I’m feeling quite productive. I’ve even been craving healthier options for everything (I think I’m making up for those first 18 weeks).
The other day I was craving porridge, but being so damn hot here at the moment, I thought overnight oats might be a better option. They’re crazy easy, absolutely delicious and wonderfully filling. I’m going to keep trying with different add ins, but I think the basic recipe will just stay the same.
- ½ cup rolled oats
- ⅓ cup milk
- 1 tbsp chia seeds
- 1 tbsp LSA
- ⅓ cup yoghurt
- A handful of blueberries
- Mix all ingredients together except the blueberries.
- Put half your oat mix into your vessel of choice, add a layer of blueberries, then the rest of your oat mix and some more blueberries on top.
- Cover and place in fridge over night.
