  • 2 kg mussels
  • 1 carrot, peeled and diced
  • 1 onion, diced
  • 1½ stalks of celery, chopped
  • 1 bay leaf
  • 3 black pepper corns
  • 2 slices of lemon
  • ½ a bottle of wine
  1. Clean and de-beard the mussels.
  2. In a heavy bottom pan fry onion, carrots, celery for a couple of minutes.
  3. Add the rest of the ingredients, bring to the boil.
  4. Add the clean mussels and cook until the mussels are open.
  5. Serve with some fresh bread.
