Vegan Chilli

Ingredients
  • 2 tbspn olive oil
  • 2 small brown onion, finely chopped
  • 2 cloves of garlic, crushed
  • 2 cups of brown lentils, soaked over night and washed well
  • 1 tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp garam masala
  • 8 cups of vegetable stock
  • 1 tin of crushed tomatoes
  • 1 tin of kidney beans
  • 1 small tin of corn
  • Cooked rice, sour cream, cheese, jalapeƱos, corn chips, coriander to serve
Instructions
  1. In a large heavy based pot, heat olive oil and fry onions until soft.
  2. Add garlic, lentils, spices, fry for about 2 minutes or until fragrant.
  3. Add stock and crushed tomatoes, bring to the boil, then reduce to a simmer for about 45 minutes. Season well with salt and pepper to taste.
  4. Drain and rise kidney beans and corn and add them to the pot. Simmer for further 20 minutes. Until the chilli is at desired consistency
  5. Serve with toppings of choice.
