Roller derby has really inspired me to watch what I eat, and become fitter.
To pass our level one, we had to demonstrate our skating skills, transitions (turning backwards while skating and continuing to skate), falls (falling correctly, on our knees), 50 laps of the derby track in 10 minutes, and a wall sit IN OUR SKATES, and six 20 second planks in our skates.
For the next test we have to do push ups and sit ups.
In derby, fitness is just as important as our skating skills.
Here I had my first ever baking experiment, and I was so happy with the result.
That and Suzanne from Strands of My Life inspired me to have another try.
I didn’t want to add any sugar and thought by adding madjool dates that there would be enough sweetness.
They turned out really well. I made mini muffins, because I usually find that eating a whole muffin is to much.
- 7 madjools dates
- 1 apple grated
- 1 egg
- 2 cups wholemeal plain flour
- 1 tsp baking powder
- 2 cups soda water
- Mix all ingredients together, and put into muffin tins.
